Hey Gang, thought I’d start off my inaugural post for this blog with one of my bestest favorite dishes.
I love this because it’s fast, quick…. but it tastes super good too.
So, ready?
This is what you need…
1 whole chicken, about 4 pounds
1 lemon
5 cloves of garlic
1 sprig of rosemary or a few sprigs of thyme….Fresh! If you don’t have, then skip it….
Olive oil
Salt and pepper (hey, indulge yourself and get some fresh pepper…and a grinder)
This is what you do:
Preheat oven to 400 degrees.
Take chicken out of bag and rinse it. And remove all the inner pieces, neck, etc.
Dry it with paper towels.
Place the chicken in a roating pan.
Season the cavity and outer skin with salt and cracked pepper.
Take the lemon and cut in half, and smash the garlic cloves…skin and all.
Place the lemon, garlic, and herbs in the cavity of the chicken.
Truss the chicken.. or not… don’t worry if you don’t want to..or know how.. sometimes I’m too lazy anyway.
Liberally oil the skin with olive oil.
Place in oven and roast until the skin is golden brown, and the juices from the cavity run clear…about 1 hour and 10 minutes.
Remove from oven and let it rest… Go have a glass of wine or something…
That’s it! enjoy…. serve with veggies and a nice salad 🙂
