Bing cherries have become the most popular of North American cherries, surpassing every other style. These Bing Cherries are firm and juicy with a deep mahogany red when ripe. They are nutritious and a good source of potassium and Vitamin C. It’s a good idea to keep fully ripe Bing Cherries in the fridge, especially during Hawaii’s hot summer months. Many people prefer to eat them straight out of the hand but they are also great for making cherry jam and preserves, cherry pies or cherry jubilee.
Ever thought about canning or bottling your own cherries? Here is information on how:
- You will need approximately 2 to 2- ½ lbs. of cherries for each quart of fruit you desire to can.
- Wash and stem cherries. Remove pits if desired or can with pits in.
- Cherries may be canned in hot water, sugar syrup or juice such as apple or white grape.
- Pack cherries tightly in sterilized jars to a ½” from top. Add hot liquid to jar leaving a ½” headspace.
- Remove air bubbles with a plastic knife, wipe rim with clean cloth and adjust the lid.
- Process in a boiling water canner or water bath–pints and quarts for approximately 25 minutes.
- Label jars with a pack date once they have completely cooked.
